Tor and I drove up to Whistler in his father's convertible with the top down. It was the perfect day for it. I donned one of my favorite patterned dresses for summer and topped it with a denim jacket as we journeyed the two hours north on the Sea to Sky Highway. Despite my many trips to Whistler in winter, this was my first trip to Whistler in summer. It was breathtakingly beautiful. The first thing we did was go walking through the nature trails and we came across a raging creek. I dared myself to put my toes in the water, and yes it was freezing cold (the creek feeds off a glacier) but so refreshing! After spending an afternoon shopping around Whistler Village, Tor and I stopped in Bar Oso for some wine and tapas. We miss the food in Spain, and since we will be returning there shortly for Tor's new television show, we felt right at home in this tasty spot. We indulged in some rosé wine, some fresh baked bread and fresh tomato dip, and chili and garlic spiced shrimp. We sat at the bar, so we got to observe the chef in action creating some delicious tapas dishes. Each dish he put together made me ache for Spain and made me excited to return there soon. Fun fact: our initial dream wedding location was in Whistler in summer but due to scheduling we decided to keep our wedding stateside. But that didn't stop us from heading up to Whistler anyway! It was a bit of a shock for me not to see snow covering trees, walkways, and rooftops but the air up there was still so fresh and a nice escape from big cities like Los Angeles. It rained a little bit on our second day, but after spending enough time in Canada, I knew to pack my Wellies which proved to be an excellent shoe choice because Tor couldn't seem to take me away from the (very cold) water. We spent our last night dining at Araxi, one of Whistler Village's top restaurants. They actually own the tapas bar we dined at earlier (Bar Oso) but this restaurant is more focused on seafood. Sipping on more rosé, we dined on fresh roma tomato soup, fresh tuna, and a shrimp and pea risotto (outstanding!). We concluded our meal with milk chocolate ice cream bars before we rolled all the way back to our hotel, which I will be sharing more about tomorrow! I had been living in southern California and missed snow, so he took me to a snow-covered Whistler for Valentine’s Day. Since then, I’ve been in love with Whistler.
