Ingredients: - 1 box white cake mix - 1 box red velvet cake mix - 6 eggs - 2/3 cup vegetable oil - two cans vanilla whipped frosting - blue food coloring - 2 1/2 cups waterPreheat your oven to 350F. Line your cupcake pan with baking cups. In one mixing bowl, prepare the white cake mix with 3 egg whites, 1/3 cup vegetable oil, and 1 1/4 cup water. Mix until thick (the thicker the batter, the fluffier the cake. This is because of the egg whites). In a separate mixing bowl with a separate whisk, prepare the red velvet cake mix with 3 whole eggs, 1/3 cup vegetable oil, and 1 1/4 cup water (again, whisk the batter until it's thick and creamy). Next, fill each baking cup with 1/3 cup white cake batter. Then add 1/3 cup red velvet cake batter. Afterwards, add a small amount of white cake batter on top. Take a toothpick (or in my case a cake tester because I ran out of toothpicks) and swirl the two batters together in each cup to get the marble look. Bake for 20 minutes and then let cool. Meanwhile, prepare to make the marble frosting. In one bowl, pour in one can of vanilla frosting. Pour the other can into another bowl. Chose which bowl you will make the frosting blue, and add several drops of blue food coloring in and mix. Add more drops until you reach your desired blue. Take a piping bag (or piping bottle) and a jagged decorating tip. Take a spoon and put the blue food coloring on one side of the bag or bottle and the white coloring on the other. Squeeze the bag (or push on the bottle) to push out the frosting on to the cupcake. Repeat for all cupcakes. Voila! Red, white, and blue! All photos taken by me and T. Coombs.
It’s party time! This Fourth of July, America will be celebrating her 238th birthday. Time to bake and celebrate! To get into the patriotic spirit, why not make some red, white, and blue marble cupcakes? Not only are the cupcakes marble, but so is the frosting! They’re great if you’re hosting a party or will be attending a barbecue.
