Easy Margarita Cupcakes

It's that time of year where everyone gets together, drinks tequila, hits a piñata, and eats delicious tacos for none other than Cinco de Mayo. Since I am more of a baker, but want to incorporate a little Cinco de Mayo tradition into a cupcake, I love to make strawberry margarita cupcakes (you can also make a lime margarita cupcake by substituting limes for strawberries). It's a surprisingly easy cupcake to make (takes only about an hour!) and perfect for any get togethers you may have to celebrate Cinco de Mayo. *NOTE: This recipe features alcohol.*
Ingredients:
 - 1 package white cake mix
 - 3/4 cup strawberry (or lime) margarita mix
 - 2 eggs
 - 1/3 cup vegetable or olive oil
 - 1/4 cup water
 - 2 tablespoons + 1/3 cup tequila
 - 1 package classic white frosting
 - white decorating sugar
Preheat your oven to 350F. Use a non-stick baking spray and spray thoroughly on a cupcake pan (I used something slightly different since I left my favorite cupcake pan in Toronto). In a bowl, mix the cake mix, margarita mix, water, oil, and eggs (Do not follow the directions on the back of the cake mix box). Mix thoroughly until batter is smooth, creamy, and lump-free. Margarita Cupcakes Place in the oven for 30 min. In the meantime, in a separate bowl, mix the classic white frosting with the two tablespoons of tequila. Mix thoroughly until the icing is thicker. Place in the refrigerator for 20 minutes to let cool and harden. Once the cupcakes are ready, place them in the freezer for 5-10 minutes to cool faster. Meanwhile, take a bowl and pour about 1/3 cup of tequila. In another separate bowl, pour in the white decorating sugar. Take a margarita glass and dip the rim into the tequila. Then dip the rim into the sugar. Set aside. Margarita Cupcakes Take a cooled cupcake and place it in the middle of the margarita glass. Decorate with the tequila frosting.
